| ANISE | This is the seed of the aniseed plant. The seeds are a grey / green colour and oval in shape. They have a sweet liquorice type of flavour. They are used in baking and to flavour liqueurs. |

| ALLSPICE | These are the berries of a tropical evergreen tree. The fruit is sun dried and ground. It has a flavour which is blend of cloves , nutmeg and cinnamon (hence it`s name). |
| CORIANDER | This is amember of the parsley family. The light spicey taste is enhanced by roasting. It is especially nice ground in curries. |
| SAFFRON | The most expensive spice in the world. It is made from the dried stigmas of the crocus. If you can afford enough it gives a deep yellow colour and a subtle flavour to your food. |
